Ingredients (Serves 2–4)

  • 1 large cucumber, sliced thinly
  • 2 medium tomatoes, chopped or sliced
  • 1 small red or white onion, thinly sliced
  • 2 tbsp olive oil
  • 1–2 tsp vinegar (apple cider or white wine vinegar) or lemon juice
  • Salt and black pepper to taste
  • Optional: fresh herbs (parsley, dill, or basil)

Instructions

  1. Prepare the vegetables:
    Wash and slice the cucumber, tomatoes, and onion. Place them in a large bowl.
  2. Dress the salad:
    Drizzle with olive oil and vinegar (or lemon juice). Season with salt and pepper.
  3. Toss gently:
    Mix everything lightly to coat the vegetables without crushing them.
  4. Chill (optional):
    Let the salad sit in the fridge for 10–15 minutes to allow flavors to meld.
  5. Serve:
