Here’s a creamy, comforting Crockpot Potato Soup recipe 🥔🥣 — easy, hearty, and perfect for a cozy meal.


🥔 Crockpot Potato Soup

Serves: 6

Ingredients

  • 2½ lbs russet potatoes, peeled and diced
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth (or vegetable broth)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme (optional)
  • 1 cup heavy cream (or half-and-half)
  • 4 oz cream cheese (optional, for extra richness)
  • 1½ cups shredded cheddar cheese

Optional toppings:

  • Cooked bacon crumbles
  • Green onions
  • Extra cheddar
  • Sour cream

Instructions

1️⃣ Add to Crockpot

  • Place potatoes, onion, garlic, broth, salt, pepper, and thyme into the slow cooker.
  • Stir to combine.

2️⃣ Cook

  • Low: 6–7 hours
  • High: 3–4 hours
    Potatoes should be very tender.

3️⃣ Blend

  • Use a potato masher for a chunky soup
    OR
  • Use an immersion blender for smooth and creamy

4️⃣ Finish

  • Stir in heavy cream, cream cheese (if using), and shredded cheddar.
  • Cover and cook another 15–20 minutes until melted and creamy.

5️⃣ Serve

Top with bacon, green onions, and extra cheese.


🔥 Tips for Best Texture

  • For thicker soup: mash more potatoes or add 1 tablespoon cornstarch mixed with 2 tablespoons cold water.
  • For lighter soup: replace heavy cream with milk.
