Crockpot Chocolate Peanut Clusters

Yields: ~20–25 clusters
Time: ~10 min prep + 1 hour in crockpot

Ingredients

  • 2 cups semi-sweet chocolate chips (or chopped chocolate)
  • 1 cup creamy peanut butter
  • 1 tsp vanilla extract
  • 2 cups roasted peanuts (unsalted or lightly salted)
  • Optional: pinch of salt for sprinkling

Instructions

  1. Prepare crockpot
    • Lightly grease a 9×13-inch dish or line with parchment paper if you plan to scoop clusters directly onto it later.
  2. Melt chocolate & peanut butter
    • Add chocolate chips and peanut butter to the crockpot.
    • Cook on low for 45–60 minutes, stirring every 15 minutes, until fully melted and smooth.
  3. Add vanilla & peanuts
    • Stir in vanilla extract and roasted peanuts. Make sure peanuts are evenly coated in chocolate mixture.
  4. Form clusters
    • Use a spoon to drop small clusters onto parchment paper or silicone mat.
    • Optional: sprinkle a tiny pinch of salt on top for contrast.
  5. Set
    • Let clusters cool at room temperature for 1 hour, or refrigerate 20–30 minutes until firm.
  6. Serve & store
    • Store in an airtight container at room temperature (2–3 days) or in the fridge (up to 2 weeks).

Tips & Variations

  • Nut-free: Substitute peanuts with toasted coconut flakes, pretzel pieces, or sunflower seeds.
  • Crunchy variation: Use chopped roasted peanuts instead of whole.
  • Extra chocolatey: Drizzle white chocolate over cooled clusters for decoration.
  • Mini bite-size: Use a small cookie scoop for uniform clusters.
