Here’s a classic Crêpe recipe — thin, delicate pancakes that can be filled with sweet or savory ingredients.


🥞 Classic French Crêpes

Ingredients (Makes 8–10 crêpes)

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 ¼ cups milk
  • 2 tbsp melted butter (plus extra for the pan)
  • 1 tbsp sugar (omit for savory crêpes)
  • ¼ tsp salt
  • ½ tsp vanilla extract (for sweet crêpes)

Instructions

1️⃣ Make the Batter

  • In a bowl, whisk together flour and eggs.
  • Gradually add milk while whisking to prevent lumps.
  • Stir in melted butter, sugar (if using), salt, and vanilla.
  • Mix until smooth and thin (batter should be similar to heavy cream).
  • Let rest 20–30 minutes for best texture.

2️⃣ Cook the Crêpes

  • Heat a nonstick skillet over medium heat and lightly grease with butter.
  • Pour about ¼ cup batter into the pan, swirling quickly to coat the bottom evenly.
  • Cook 1–2 minutes until edges lift and bottom is lightly golden.
  • Flip and cook another 30–60 seconds.
  • Remove and stack on a plate. Repeat with remaining batter.

3️⃣ Fill & Serve

Sweet Filling Ideas:

  • Fresh berries and whipped cream
  • Nutella and sliced bananas
  • Lemon juice and powdered sugar
  • Strawberry jam

Savory Filling Ideas:

  • Ham and cheese
  • Spinach and mushrooms
  • Scrambled eggs and bacon
  • Chicken with creamy sauce

Fold or roll and serve warm.


💡 Tips

  • If batter is too thick, add 1–2 tbsp milk.
  • Use a blender for ultra-smooth batter.
  • Keep cooked crêpes warm under foil.
  • Crêpes can be refrigerated (stacked with parchment between) for 2–3 days.
