Instructions

  1. Preheat oven to 375°F / 190°C. Grease a 9×13-inch casserole dish.
  2. Cook the beef
    In a large skillet, brown beef with onion and bell pepper. Drain excess fat. Add garlic and cook 30 seconds.
  3. Build the filling
    Stir in corn, beans, diced tomatoes, chili powder, paprika, cumin, salt, and pepper. Simmer 5 minutes.
  4. Combine with starch (optional)
    If using rice or pasta, stir it in now.
  5. Assemble casserole
    Pour mixture into prepared dish. Sprinkle cheese evenly on top.
