🧄🧀 Cottage Cheese Garlic Knots

Soft, cheesy, garlicky knots — perfect as a snack, side dish, or appetizer.


🛒 Ingredients (Makes 12–14 knots)

Dough:

  • 2 ½ cups all-purpose flour
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 packet (2 ¼ tsp) active dry yeast
  • ¾ cup warm water (110°F / 43°C)
  • ½ cup cottage cheese
  • 2 tbsp olive oil

Garlic Butter Topping:

  • 3 tbsp butter, melted
  • 3 cloves garlic, minced
  • 2 tbsp parsley, chopped
  • Optional: ¼ cup grated Parmesan

🥣 Instructions

1️⃣ Make the Dough

  1. Dissolve sugar in warm water, sprinkle yeast on top, and let sit 5–10 minutes until foamy.
  2. In a large bowl, combine flour and salt.
  3. Add cottage cheese, olive oil, and yeast mixture. Mix until soft dough forms.
  4. Knead 5–7 minutes until smooth and elastic.
  5. Cover and let rise 1 hour until doubled.

2️⃣ Shape the Knots

  • Punch down dough and divide into 12–14 pieces.
  • Roll each into a rope (~6 inches) and tie into a knot.
  • Place on greased or parchment-lined baking sheet.

3️⃣ Second Rise

  • Cover lightly and let rise 20–30 minutes.

4️⃣ Bake

  • Preheat oven to 375°F (190°C).
  • Bake 15–18 minutes until lightly golden.

5️⃣ Garlic Butter Topping

  • Mix melted butter + minced garlic + parsley.
  • Brush over hot knots immediately.
  • Optional: sprinkle Parmesan on top.

6️⃣ Serve

  • Serve warm, optionally with marinara sauce or as a side to pasta.

🔥 Tips & Variations

  • Extra Cheesy: Fold shredded mozzarella into dough or sprinkle on top before baking.
  • Spicy Kick: Add crushed red pepper to garlic butter.
  • Make-Ahead: Freeze shaped knots before the second rise; bake straight from frozen adding 2–3 minutes.
  • Herby Twist: Use thyme or rosemary instead of parsley.
