🛒 Ingredients (Makes ~20 bites)
- 2 cups mashed potatoes (about 2–3 medium potatoes)
- 1 cup shredded cheddar cheese (or mix of cheeses)
- 1/4 cup grated Parmesan (optional)
- 1 egg, beaten
- 1/2 tsp garlic powder
- Salt & black pepper, to taste
- 1/2–3/4 cup breadcrumbs (for coating)
- 2–3 tbsp oil or melted butter for baking/frying
- Optional: chopped chives or parsley for garnish
🥣 Instructions
1️⃣ Prepare Mixture
- In a large bowl, combine mashed potatoes, cheddar, Parmesan, egg, garlic powder, salt, and pepper.
- Mix until smooth and well combined.
2️⃣ Shape the Bites
- Scoop small portions (1–2 tbsp) and roll into balls.
- Roll each ball in breadcrumbs to coat evenly.
3️⃣ Cook the Bites
Oven-Baked:
- Preheat oven to 400°F (200°C).
- Place bites on a greased baking sheet and lightly brush with oil or butter.
- Bake 15–20 minutes until golden and crispy.
Pan-Fried:
- Heat 2–3 tbsp oil in a skillet over medium heat.
- Fry bites 2–3 minutes per side until golden brown and crispy.
- Drain on paper towels.

- Serve warm with ketchup, ranch, or sour cream for dipping.
- Garnish with fresh herbs if desired.
