🧾 Ingredients (Makes 12 muffins)

  • 2 cups leftover mashed potatoes (or freshly made)
  • 1 cup shredded cheddar cheese
  • 2 large eggs
  • ¼ cup milk
  • ¼ cup finely chopped green onions (optional)
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup breadcrumbs (for topping, optional)
  • Butter or cooking spray (for greasing muffin tin)

🔥 Instructions

1. Preheat Oven

  • Preheat oven to 375°F (190°C).
  • Grease a 12-cup muffin tin with butter or cooking spray.

2. Mix Ingredients

  • In a large bowl, combine mashed potatoes, cheese, eggs, milk, green onions, garlic powder, salt, and pepper.
  • Mix until well combined.

3. Fill Muffin Tin

  • Spoon the potato mixture into each muffin cup, filling almost to the top.
  • Optional: Sprinkle breadcrumbs on top for extra crunch.

4. Bake

  • Bake 20–25 minutes, until tops are golden and slightly crispy.
