Here’s a crispy, juicy Cheesy Chicken Fritters recipe—perfect as an appetizer, snack, or easy dinner:


Ingredients (Makes about 12 fritters)

  • 2 cups cooked chicken, finely chopped or shredded
  • 1 cup shredded mozzarella or cheddar cheese
  • 2 large eggs
  • ¼ cup mayonnaise
  • ¼ cup all-purpose flour
  • 2 tbsp chopped fresh parsley (optional)
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp paprika
  • Salt and black pepper, to taste
  • 2–3 tbsp oil (for frying)

Instructions

  1. Prepare the Mixture:
    • In a large bowl, combine chopped chicken, shredded cheese, eggs, mayonnaise, flour, parsley, garlic powder, onion powder, paprika, salt, and pepper.
    • Mix until well combined. The mixture should be thick and scoopable.
  2. Heat the Pan:
    • Heat oil in a large skillet over medium heat.
  3. Form and Cook Fritters:
    • Scoop about 2 tablespoons of the mixture per fritter into the skillet.
    • Flatten slightly with the back of a spoon.
    • Cook 3–4 minutes per side, until golden brown and cooked through.
  4. Drain and Serve:
    • Transfer to a paper towel–lined plate to drain excess oil.
    • Serve warm.

💡 Tips for Best Results

  • Finely chop the chicken for better texture and easier binding.
  • If mixture feels too loose, add 1–2 extra tablespoons of flour.
  • For extra crispiness, substitute half the flour with cornstarch.
  • Try adding diced jalapeños or green onions for more flavor.

🥣 Simple Garlic Dip (Optional)

Mix together:

  • ½ cup sour cream or Greek yogurt
  • 1 tbsp mayonnaise
  • 1 tsp lemon juice
  • ½ tsp garlic powder
  • Salt to taste

Serve fritters with the dip, a side salad, or tuck them into slider buns for mini sandwiches.
