🥬 Cabbage Fritters

Ingredients (Makes ~12 fritters)

  • 3 cups finely shredded cabbage (about ½ medium head)
  • 1 small carrot, grated (optional, for color & sweetness)
  • 2 green onions, thinly sliced
  • 2 cloves garlic, minced
  • 2 large eggs
  • ½ cup all-purpose flour
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp paprika or cayenne (optional, for a little kick)
  • 2–3 tbsp olive oil or vegetable oil for frying

Instructions

  1. Prepare the cabbage
    Place shredded cabbage in a bowl. Sprinkle lightly with salt and let sit 5–10 minutes to draw out moisture. Then squeeze gently to remove excess liquid.
  2. Mix batter
    In a large bowl, combine cabbage, carrot, green onions, garlic, eggs, flour, salt, pepper, and paprika (if using). Mix until well combined. The mixture should hold together when scooped; add a little more flour if too wet.
  3. Heat oil
    In a large skillet, heat 2–3 tablespoons oil over medium heat.
  4. Form & cook fritters
    Scoop 2–3 tablespoons of the mixture per fritter and flatten slightly in the skillet.
    Cook 3–4 minutes per side until golden brown and crispy.
  5. Drain & serve
    Transfer fritters to a paper towel-lined plate to drain excess oil. Serve hot with sour cream, yogurt, or your favorite dipping sauce.

Tips & Variations

  • Add shredded cheese or crumbled feta for extra flavor.
  • Mix in herbs like parsley, dill, or cilantro.
  • For a spicier version, add chopped jalapeños or red pepper flakes.
  • Bake instead of frying: place fritters on a parchment-lined baking sheet and bake at 400°F (200°C) for 15–20 minutes, flipping halfway.
