Baked Potato with Sausage and Cheese

Ingredients (serves 2–4)

  • 2–4 large baking potatoes (Russet works best)
  • 1 cup cooked sausage (pork, chicken, or turkey; crumbled or sliced)
  • 1 cup shredded cheddar cheese (or a mix of cheddar & mozzarella)
  • 2–3 tbsp butter
  • ¼ cup sour cream (optional)
  • 2–3 green onions, chopped
  • Salt and pepper, to taste
  • Olive oil

Instructions

1. Bake the potatoes

  1. Preheat oven to 425°F (220°C).
  2. Scrub potatoes, pierce several times with a fork.
  3. Rub with a little olive oil and sprinkle with salt.
  4. Place directly on oven rack or baking sheet.
  5. Bake 45–60 min until tender (knife slides in easily).

Shortcut: Microwave for 5–8 min per potato, then crisp in oven 10 min for the skin.


2. Cook the sausage

  • While potatoes bake, cook sausage in a skillet over medium heat until browned and cooked through. Drain excess fat.

3. Assemble the loaded potato

  1. Once baked, slice the potato open lengthwise and fluff the insides with a fork.
  2. Add butter, salt, and pepper.
  3. Top with cooked sausage.
  4. Sprinkle cheese generously over the top.
  5. Pop under the broiler 2–3 min until cheese melts and bubbles.

4. Optional toppings

  • Sour cream
  • Chopped green onions
  • Crumbled bacon (extra indulgence)
  • Hot sauce or salsa
