Herb-Crusted Salmon Plate

Ingredients

For the Salmon

  • 2 salmon fillets
  • 2 tbsp olive oil
  • 2 tbsp fresh parsley (chopped)
  • 1 tbsp fresh dill or thyme
  • 2 cloves garlic (minced)
  • 1 tbsp lemon juice
  • 2 tbsp breadcrumbs
  • Salt & black pepper

For Garlic Potatoes

  • 3–4 medium potatoes (cubed)
  • 2 tbsp butter or olive oil
  • 3 cloves garlic (minced)
  • Salt, pepper
  • 1 tbsp chopped parsley

For Vegetables

  • 1 cup broccoli
  • 1 carrot (sliced)
  • ½ bell pepper (sliced)
  • 1 tbsp olive oil
  • Pinch of salt & pepper

Instructions

1. Prepare Garlic Potatoes

  1. Boil cubed potatoes in salted water for 8–10 minutes until slightly tender.
  2. Heat butter or oil in a pan.
  3. Add garlic and cook for 30 seconds.
  4. Add potatoes and sauté until golden and crispy.
  5. Season with salt, pepper, and parsley.

2. Make Herb Crust

Mix in a bowl:

  • parsley
  • dill/thyme
  • breadcrumbs
  • garlic
  • olive oil
  • lemon juice
  • salt & pepper

3. Cook the Salmon

  1. Preheat oven to 200°C (400°F).
  2. Place salmon on a baking tray lined with parchment.
  3. Spread the herb mixture on top of each fillet.
  4. Bake 12–15 minutes until salmon is flaky.

(Optional: Broil 1–2 minutes for extra crispy crust.)


4. Cook the Vegetables

  1. Heat olive oil in a pan.
  2. Stir-fry broccoli, carrots, and peppers for 4–5 minutes.
  3. Season with salt and pepper.

5. Plate the Dish 🍽️

Arrange on a plate:

  • Herb-crusted salmon in the center
  • Garlic potatoes on one side
  • Colorful vegetables on the other

Add a lemon wedge on top for a fresh finish. 🍋
