Spanish Rice with Ground Beef

Here’s a simple and tasty way to make Spanish Rice with Ground Beef—a one-pan meal packed with flavor:


Ingredients:

  • 1 lb ground beef
  • 1 cup long-grain rice
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes (with juice)
  • 1 cup beef or chicken broth
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1/2 cup frozen peas or corn (optional)
  • 2 tbsp vegetable oil

Instructions:

  1. Cook the beef:
    In a large skillet, heat oil over medium heat. Add ground beef, onion, and garlic. Cook until beef is browned and onions are soft. Drain excess fat if necessary.
  2. Add spices & rice:
    Stir in chili powder, cumin, paprika, salt, and pepper. Add the rice and cook 1–2 minutes, stirring, until lightly toasted.
  3. Add liquids:
    Pour in diced tomatoes with their juice and the broth. Stir well.
  4. Simmer:
    Bring to a boil, then reduce heat to low. Cover and simmer 18–20 minutes, or until rice is tender and liquid is absorbed.
  5. Optional veggies:
    Stir in peas or corn in the last 5 minutes of cooking.
  6. Fluff & serve:
    Fluff rice with a fork and serve hot. Garnish with chopped cilantro if desired.

💡 Tip: For extra flavor, you can sauté the rice with a bit of tomato paste before adding the liquid.
