For the cupcakes

  • 1 cup mashed sweet potato (cooked and cooled)

👨‍🍳 How to Make Them

  1. Preheat oven
    • Heat oven to 175°C / 350°F and line a cupcake pan.
  2. Mix dry ingredients
    • In a bowl combine flour, baking powder, baking soda, and cinnamon.
  3. Cream butter and sugar
    • Beat butter and sugar until light and fluffy.
    • Add eggs and vanilla.
  4. Add sweet potato and milk
    • Mix in mashed sweet potato and milk until smooth.
  5. Combine mixtures
    • Gradually add dry ingredients to form the batter.
  6. Bake
    • Fill cupcake liners about ⅔ full and bake 18–22 minutes.
  7. Make frosting
    • Beat butter, honey, powdered sugar, and vanilla until creamy.
  8. Decorate
    • Once cupcakes cool, pipe or spread honey butter frosting on top.

  • Drizzle extra honey for sweetness
