🍲 Stuffed Pepper Soup

Stuffed pepper soup is a comforting soup inspired by Stuffed peppers. Instead of filling whole peppers, all the ingredients—ground beef, bell peppers, tomatoes, rice, and broth—are cooked together in a hearty soup.


🌶️ Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 onion (chopped)
  • 2–3 bell peppers (red, green, or yellow, diced)
  • 2 cloves garlic (minced)
  • 1 can diced tomatoes
  • 4 cups beef broth
  • 1 cup cooked rice
  • 1 tbsp tomato paste
  • 1 tsp Italian seasoning
  • Salt and black pepper

👨‍🍳 How to Make It

  1. Cook the beef
    • Heat oil in a pot and cook ground beef until browned.
    • Drain excess fat if needed.
  2. Add vegetables
    • Stir in onion, bell peppers, and garlic.
    • Cook about 5 minutes until slightly soft.
  3. Build the soup
    • Add diced tomatoes, tomato paste, beef broth, and Italian seasoning.
  4. Simmer
    • Let the soup simmer 15–20 minutes so the flavors combine.
  5. Add rice
    • Stir in cooked rice and cook 5 more minutes.

🍽️ Serving Ideas

Top with:

  • 🧀 shredded cheese
  • 🌿 fresh parsley
  • 🌶️ extra pepper flakes

Serve with crusty bread or garlic bread.


💡 Tip

Cooking the rice separately keeps it from getting too soft if the soup is stored for later.
