🥔 Twice-Baked Potatoes

Twice-baked potatoes are baked potatoes that are baked twice. First the potato is baked whole, then the inside is scooped out, mixed with creamy ingredients like butter, cheese, and sour cream, and finally put back into the potato skin and baked again until golden and fluffy.


🧀 Ingredients

  • 4 large potatoes (usually russet)
  • 2 tbsp butter
  • ½ cup sour cream
  • ½ cup shredded cheddar cheese
  • 2 tbsp milk
  • Salt and black pepper
  • 2 tbsp chopped green onions

1. First bake

  • Preheat oven to 200°C / 400°F.
  • Bake whole potatoes for 45–60 minutes until soft.

2. Scoop the filling

  • Let them cool slightly.
  • Cut each potato in half and scoop out the inside into a bowl, leaving the skin intact.

3. Mix the filling

  • Mash the potato with butter, sour cream, milk, cheese, salt, and pepper.

4. Refill the skins

  • Spoon the creamy mixture back into the potato skins.

5. Second bake

  • Bake again for 15–20 minutes until the tops are golden and slightly crispy.
