Shrimp and Spinach 🍤🥬

Shrimp and spinach is a quick, healthy, and flavorful dish featuring tender shrimp sautéed with fresh spinach. It’s versatile and works as a main course, pasta topping, or a light stir-fry.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 4 cups fresh spinach
  • 2–3 cloves garlic, minced
  • 2 tbsp olive oil or butter
  • ½ tsp crushed red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1 tbsp lemon juice (optional, for brightness)

Instructions

  1. Cook the shrimp
    Heat olive oil or butter in a large skillet over medium-high heat. Add shrimp, season with salt and pepper, and cook 2–3 minutes per side until pink and opaque. Remove from skillet and set aside.
  2. Sauté spinach
    In the same skillet, add garlic and red pepper flakes (if using). Sauté 30 seconds until fragrant, then add spinach. Cook until wilted, about 2–3 minutes.
  3. Combine and finish
    Return shrimp to the skillet and toss with spinach. Drizzle with lemon juice if desired. Serve immediately.

  • Serve over rice, quinoa, or pasta
  • Pair with garlic bread for a fuller meal
  • Sprinkle with grated Parmesan cheese or pine nuts for extra flavor

💡 Tip:

  • For extra flavor, add a splash of white wine when sautéing shrimp.
  • Don’t overcook spinach—it should be tender but still bright green.
