Beef Tips and Noodles 🥩🍝

Beef tips and noodles is a hearty comfort dish featuring tender chunks of beef in a rich gravy, served over egg noodles. It’s perfect for a weeknight dinner or a cozy meal.

Ingredients

  • 1 lb beef sirloin or stew meat, cut into bite-sized pieces
  • 2 tbsp olive oil or butter
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 2 cups beef broth
  • 1 tsp Worcestershire sauce
  • ½ tsp dried thyme (optional)
  • Salt and black pepper to taste
  • 8 oz egg noodles, cooked according to package instructions

Instructions

  1. Brown the beef
Heat oil or butter in a large skillet over medium-high heat. Brown beef on all sides, then remove from the skillet.
  2. Cook onions and garlic
In the same skillet, sauté onions and garlic until softened.
  3. Make the gravy
Sprinkle flour over onions and garlic, stirring 1–2 minutes. Gradually add beef broth and Worcestershire sauce, stirring until smooth.
  4. Simmer beef
Return beef to the skillet, add thyme if using, and simmer 20–25 minutes until beef is tender and gravy thickens.
  5. Serve
Spoon beef and gravy over cooked egg noodles.

Serving Ideas 🍽️

  • Garnish with chopped parsley
  • Serve with steamed green beans or broccoli
  • Add a side of crusty bread to soak up the gravy

💡 Tip:

  • For extra flavor, marinate beef in a little Worcestershire sauce and garlic before cooking.
  • You can also make this in a slow cooker: brown the beef first, then simmer with gravy ingredients on LOW for 6–8 hours.

I can provide a one-pot version that cooks the noodles right in the beef gravy if you want a faster cleanup version.
