Pot pie

Pot Pie 🥧🍗

Pot pie is a classic comfort food featuring a flaky pastry crust filled with meat, vegetables, and creamy sauce. Chicken is most common, but beef or turkey works too.


Ingredients

For the Filling

  • 2 cups cooked chicken or beef, diced
  • 1 cup carrots, chopped
  • 1 cup peas
  • ½ cup corn (optional)
  • ½ cup chopped onion
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 1 ½ cups chicken broth
  • ½ cup milk
  • Salt and black pepper to taste
  • ½ tsp dried thyme

For the Crust

  • 1 package pie crust (store-bought or homemade)

Instructions

  1. Preheat oven
    Set oven to 425°F (220°C).
  2. Cook vegetables
    In a large skillet, melt butter and sauté onions and carrots until slightly tender.
  3. Make the sauce
    Sprinkle flour over vegetables and stir 1–2 minutes. Gradually add chicken broth and milk, stirring until thickened. Season with salt, pepper, and thyme.
  4. Add meat and peas
    Stir in cooked chicken (or beef), peas, and corn. Remove from heat.
  5. Assemble the pot pie
    Place one pie crust in a baking dish. Pour filling over it. Cover with the second crust and seal edges. Cut slits in the top for steam to escape.
  6. Bake
    Bake for 30–35 minutes until crust is golden brown. Let rest 5 minutes before serving.

Serving Ideas 🍽️

  • Serve with a simple green salad 🥗
  • Pair with mashed potatoes for extra comfort
  • Add a sprinkle of fresh parsley on top

💡 Tip: For a quicker version, you can use pre-cooked frozen mixed vegetables and rotisserie chicken.
