Ground Beef Stew 🥩🥕🍲

Ground beef stew is a hearty and comforting dish, perfect for a weeknight dinner. It’s quicker to make than traditional stew since it uses ground beef instead of chunks of meat.


Ingredients

  • 1 lb ground beef
  • 1 large onion, chopped
  • 2–3 cloves garlic, minced
  • 3 cups chopped potatoes
  • 2 cups chopped carrots
  • 2 cups chopped celery
  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 tbsp tomato paste (optional)
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and black pepper to taste
  • 2 tbsp olive oil or butter

Instructions

  1. Brown the beef
    In a large pot or Dutch oven, heat olive oil over medium heat. Cook ground beef until browned. Remove and set aside.
  2. Sauté vegetables
    In the same pot, sauté onion, garlic, carrots, and celery for 5–6 minutes until slightly softened.
  3. Add liquids and seasoning
    Return beef to the pot. Stir in beef broth, diced tomatoes, tomato paste, thyme, rosemary, salt, and pepper.
  4. Add potatoes
    Stir in chopped potatoes. Bring the stew to a boil, then reduce heat and simmer 25–30 minutes, or until vegetables are tender.
  5. Finish
    Taste and adjust seasoning. For a thicker stew, mash a few potatoes in the pot or stir in 1–2 tbsp flour or cornstarch mixed with water.

  • Sprinkle with fresh parsley or shredded cheese
  • Pair with a side salad 🥗

💡 Tip: For extra flavor, brown the ground beef with a splash of Worcestershire sauce before adding vegetables.
