Ingredients
- 1 lb ground beef
- 1 large onion, chopped
- 2–3 cloves garlic, minced
- 3 cups chopped potatoes
- 2 cups chopped carrots
- 2 cups chopped celery
- 4 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 2 tbsp tomato paste (optional)
- 1 tsp dried thyme
- 1 tsp dried rosemary

Instructions
- Brown the beef
In a large pot or Dutch oven, heat olive oil over medium heat. Cook ground beef until browned. Remove and set aside. - Sauté vegetables
In the same pot, sauté onion, garlic, carrots, and celery for 5–6 minutes until slightly softened. - Add liquids and seasoning
Return beef to the pot. Stir in beef broth, diced tomatoes, tomato paste, thyme, rosemary, salt, and pepper. - Add potatoes
Stir in chopped potatoes. Bring the stew to a boil, then reduce heat and simmer 25–30 minutes, or until vegetables are tender. - Finish
Taste and adjust seasoning. For a thicker stew, mash a few potatoes in the pot or stir in 1–2 tbsp flour or cornstarch mixed with water.
