Here’s a simple and flavorful Curried Sausages recipe—a classic comfort food with a mildly spiced, savory sauce.


Ingredients (serves 4)

  • 1 lb (450g) sausages (pork, beef, or chicken)
  • 1 tablespoon vegetable oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder (adjust to taste)
  • 1 teaspoon ground turmeric (optional)
  • 1 tablespoon tomato paste or ketchup
  • 1 cup beef or chicken stock
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 1 teaspoon sugar (optional, balances acidity)
  • 1/4 cup cream or coconut milk (optional, for creaminess)
  • Fresh parsley or cilantro, for garnish

Instructions

1. Brown the sausages:

  • Heat oil in a skillet over medium heat.
  • Brown the sausages on all sides (they don’t need to be fully cooked). Remove and set aside.

2. Cook the aromatics:

  • In the same skillet, sauté onions until soft.
  • Add garlic, curry powder, and turmeric. Cook 1–2 minutes until fragrant.

3. Make the sauce:

  • Stir in tomato paste, stock, salt, pepper, and sugar.
  • Return sausages to the skillet.
  • Simmer 15–20 minutes, turning occasionally, until sausages are cooked through and sauce thickens.

4. Add cream (optional):

  • Stir in cream or coconut milk for a richer, milder curry sauce.

5. Serve:

  • Garnish with parsley or cilantro.
  • Serve with rice, mashed potatoes, or crusty bread.

💡 Tips:

  • For extra flavor, add a small diced apple or sliced bell pepper to the sauce.
  • Use mild curry powder for a gentle heat, or add chili flakes for spicier sausages.
  • Leftovers taste even better the next day as the flavors meld.
