Taco Stuffed Baked Potatoes combine the flavors of tacos with a hearty baked potato. They’re easy, filling, and great for weeknight dinners.


Ingredients (serves 4)

  • 4 large baking potatoes (russet potatoes work best)
  • 1 lb ground beef or ground turkey
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 1/2 cup water
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1/2 cup sour cream
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped green onions
  • Optional toppings: shredded lettuce, jalapeños, avocado, salsa

Instructions

1. Bake the potatoes

  • Preheat oven to 400°F (200°C).
  • Scrub potatoes, prick them with a fork, and place on a baking sheet.
  • Bake 45–60 minutes until tender.

2. Cook the taco meat

  • In a skillet over medium heat, cook ground beef until browned.
  • Drain excess fat.
  • Add taco seasoning and water. Simmer 5 minutes until thickened.

3. Prepare the potatoes

  • Slice each baked potato open lengthwise.
  • Fluff the inside with a fork.

4. Add the filling

  • Spoon taco meat into each potato.
  • Top with cheese, sour cream, tomatoes, and green onions.

5. Serve

  • Add optional toppings like lettuce, salsa, or avocado and serve hot.

  • For extra flavor, brush potatoes with olive oil and sprinkle salt before baking.
  • You can also use shredded chicken or black beans instead of beef.
  • For crispy skins, bake potatoes directly on the oven rack.
