🥔🌿 Bowl of Potato Dill Soup

This comforting soup is creamy, light, and fragrant with fresh dill. It’s common in many Eastern and Northern European kitchens and is perfect for a cozy meal. 🍲


🧾 Ingredients

  • 4 medium potatoes, peeled and diced
  • 1 small onion, finely chopped
  • 2 tbsp butter or olive oil
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • ½ cup cream or milk
  • 2–3 tbsp fresh dill, chopped
  • 1 tbsp lemon juice (optional but brightens flavor)
  • Salt and black pepper to taste
  • Optional: ½ cup sour cream for extra creaminess

👩‍🍳 Instructions

1️⃣ Sauté aromatics

In a large pot, melt butter over medium heat. Add onion and cook 3–4 minutes until soft. Stir in garlic and cook another minute.

2️⃣ Cook potatoes

Add diced potatoes and broth. Bring to a boil, then reduce heat and simmer 15–20 minutes until potatoes are tender.

3️⃣ Blend (optional)

For a creamy texture, blend half the soup with an immersion blender while leaving some potato chunks.

4️⃣ Finish the soup

Stir in cream, dill, lemon juice, salt, and pepper. Simmer 2–3 minutes.


🍽️ Serving

Serve hot in a bowl with:

  • a spoon of sour cream
  • extra fresh dill
  • crusty bread or toast 🥖
