🧅 French Onion Soup (Classic Style)

A rich, deeply flavored soup made from slowly caramelized onions and beef broth, traditionally topped with toasted bread and melted cheese. 🍲🧀


🧾 Ingredients

  • 4 large yellow onions, thinly sliced
  • 3 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp sugar (helps caramelization, optional)
  • 2 cloves garlic, minced
  • 1 tbsp flour
  • ½ cup dry white wine (optional)
  • 5 cups beef broth
  • 1 tsp fresh thyme (or ½ tsp dried)
  • 1 bay leaf
  • Salt and black pepper to taste
  • 1 baguette, sliced
  • 1–1½ cups grated Gruyère cheese (or Swiss cheese)

1. Caramelize the onions
Heat butter and olive oil in a large pot over medium heat. Add sliced onions and cook slowly for 25–35 minutes, stirring occasionally, until deep golden brown.

2. Add flavor
Stir in garlic and cook for 1 minute. Sprinkle flour over the onions and cook for another minute.

3. Deglaze the pot
Pour in the white wine and scrape the bottom of the pot to release the browned bits.

4. Simmer the soup
Add beef broth, thyme, bay leaf, salt, and pepper. Simmer for 20–25 minutes.

5. Prepare the topping
Toast baguette slices in the oven until lightly crisp.

6. Assemble
Ladle soup into oven-safe bowls. Place toasted bread on top and cover with grated Gruyère cheese.

7. Broil
Place bowls under the broiler for 2–3 minutes until the cheese melts and bubbles.

  • Sprinkle fresh thyme or parsley on top.
  • Serve with a simple green salad or extra crusty bread.
  • The deeper the onion caramelization, the richer the flavor.
