Ingredients (serves 4)

  • 1 rack of pork ribs (baby back or spare ribs)
  • 1 cup barbecue sauce (your favorite brand or homemade)
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp black pepper
  • ½ tsp salt
  • Optional: pinch of cayenne for heat

Instructions

1. Prepare the ribs

  • Remove the silver membrane from the back of the ribs (this helps them become tender).
  • Cut the rack into 2–3 sections to fit in the crockpot.

2. Season

  • Rub ribs with smoked paprika, garlic powder, onion powder, salt, pepper, and cayenne if using.

3. Layer in crockpot

  • Place ribs in the crockpot, standing them upright if possible.
  • Pour barbecue sauce over the ribs, coating all sides.

4. Cook

  • Cover and cook:
    • Low: 6–7 hours
    • High: 3–4 hours
  • Ribs should be tender but not falling apart completely.

5. Optional finishing step

  • For caramelized edges, preheat oven to 220°C (425°F).
  • Place ribs on a baking sheet, brush with extra barbecue sauce, and bake 5–10 minutes until bubbly and slightly charred.

6. Serve

  • Serve ribs hot with extra barbecue sauce.
  • Pair with coleslaw, corn on the cob, or baked beans.

  • Baby back ribs cook faster and are more tender; spare ribs are meatier and richer in flavor.
  • Layer vegetables like sliced onions or bell peppers under the ribs to add flavor to the sauce.
  • Leftover ribs can be shredded for sandwiches or tacos.
