Ingredients (serves 4–6)

  • 500 g sausages (pork, beef, or mixed)
  • 4–5 medium potatoes (sliced or cubed)
  • 2 carrots (sliced)
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 cup frozen peas
  • 2 cups beef or chicken stock
  • 1 tsp dried thyme
  • 1 tsp smoked paprika (optional)
  • Salt and black pepper to taste
  • 2 tbsp butter or oil
  • 2 tbsp flour (for thickening)
  • Optional: fresh parsley for garnish

Instructions

1. Brown the sausages

  • Heat butter or oil in a large skillet or pot.
  • Brown the sausages on all sides (they don’t need to be fully cooked). Remove and set aside.

2. Cook the vegetables

  • In the same pot, sauté onion, garlic, carrots, and potatoes for 3–5 minutes.

3. Make the sauce

  • Sprinkle flour over the vegetables and stir to coat.
  • Slowly add stock, stirring constantly to avoid lumps.
  • Add thyme, paprika, salt, and pepper.

4. Combine

  • Return the browned sausages to the pot.
  • Cover and simmer on low heat for 25–30 minutes, or until vegetables are tender and sausages are cooked through.
  • Add frozen peas in the last 5 minutes of cooking.

5. Serve

  • Serve hot in bowls, garnished with fresh parsley.
  • Pair with crusty bread or a side salad.

  • Swap sausages for chicken sausages or smoked sausage for different flavors.
  • For a richer flavor, stir in a splash of cream just before serving.
  • Make it in a slow cooker: cook on low 6–7 hours or high 3–4 hours for an easy hands-off version.
