Roast beef with potatoes and carrots is a classic hearty meal where a beef roast is cooked slowly with vegetables until everything is tender and flavorful. 🥩🥔🥕

Ingredients

  • 1–1.5 kg beef roast (chuck or round)
  • 4–5 potatoes, peeled and cut into chunks
  • 3–4 carrots, cut into pieces
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 cup beef broth or water
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried thyme or rosemary

Cooking Method

1. Prepare the beef

  • Preheat oven to 180°C (350°F).
  • Rub the beef with salt, pepper, paprika, and herbs.

2. Sear the meat

  • Heat olive oil in a large pan.
  • Brown the beef on all sides for 3–4 minutes each side to lock in flavor.

3. Arrange the vegetables

  • Place potatoes, carrots, onion, and garlic in a roasting dish.
  • Put the beef on top.

4. Add liquid

  • Pour beef broth around the meat.

5. Roast

  • Cover with foil and roast for 1½–2 hours, until the beef is tender.

6. Serve

  • Slice the beef and serve with roasted potatoes and carrots.
  • Spoon the pan juices over the top for extra flavor.
