🍗🥬 Turkey Wings, Collard Greens, and Black-Eyed Peas

This is a classic Southern-style comfort meal. The turkey wings are roasted until tender, the collard greens are slow-simmered with smoky flavor, and the black-eyed peas are cooked with seasoning for a hearty side.


🍗 Smothered Turkey Wings

Ingredients

  • 2–3 lbs turkey wings
  • 1 onion, sliced
  • 2 cups chicken broth
  • 2 tbsp oil or butter
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • ½ tsp black pepper
  • 1 tsp salt
  • 1 tbsp flour (for gravy)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season turkey wings with garlic powder, onion powder, paprika, salt, and pepper.
  3. Place in a baking dish with sliced onions.
  4. Add 1 cup broth, cover with foil, and bake 1 hour.
  5. Remove foil and bake another 30 minutes to brown.
  6. For gravy: mix flour with remaining broth, pour into the pan, and cook until thick.

🥬 Southern Collard Greens

Collard greens often come from the plant Collard greens.

Ingredients

  • 2 bunches collard greens (washed and chopped)
  • 1 smoked turkey leg or turkey wing
  • 1 small onion, chopped
  • 3 cups chicken broth
  • 2 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp red pepper flakes (optional)
  • 1 tbsp vinegar

Instructions

  1. In a large pot add broth, smoked turkey, onion, and garlic.
  2. Bring to a simmer for 15 minutes.
  3. Add chopped greens.
  4. Cook 45–60 minutes until tender.
  5. Stir in vinegar before serving.

🫘 Black-Eyed Peas

The beans used are Black-eyed pea, a traditional Southern dish often eaten for good luck.

Ingredients

  • 2 cups dried black-eyed peas (or 3 cups canned)
  • 1 smoked turkey wing or ham hock
  • 1 small onion, chopped
  • 3 cups water or broth
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • 1 bay leaf

Instructions

  1. If using dried peas, soak 6–8 hours or overnight.
  2. Add peas, smoked turkey, onion, broth, and spices to a pot.
  3. Simmer 45–60 minutes until peas are tender.
  4. Remove the turkey bone and stir.

🍽️ Serving Plate

Serve together with:

  • Cornbread
  • White rice
  • Hot sauce
