Ingredients

  • 4 pork chops (bone-in or boneless)
  • 4 medium potatoes, peeled and sliced
  • 1 small onion, sliced
  • 2 tbsp olive oil or butter
  • 3 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ½ tsp dried thyme or rosemary
  • Salt and black pepper to taste
  • 1 cup chicken broth
  • Optional: ½ cup shredded cheese

Instructions

  1. Preheat oven
    Preheat oven to 375°F (190°C).
  2. Prepare potatoes
    Place sliced potatoes and onions in a greased baking dish. Drizzle with olive oil, add salt, pepper, and half of the garlic. Toss to coat.
  3. Season pork chops
    Season pork chops with paprika, garlic powder, thyme, salt, and pepper.
  4. Sear the pork chops (optional)
    In a skillet over medium-high heat, sear pork chops for 2–3 minutes per side until lightly browned.
  5. Assemble the dish
    Place pork chops on top of the potatoes. Pour chicken broth into the baking dish and sprinkle remaining garlic over everything.
  6. Bake
    Cover with foil and bake 35–40 minutes. Remove foil for the last 10 minutes so the pork chops brown slightly.
  7. Serve
    Let rest a few minutes, then serve with the flavorful potatoes and onions.
