Ingredients

  • 4–6 bone-in, skin-on chicken thighs
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp dried thyme (or fresh sprigs)
  • Salt and pepper to taste
  • 2 cups assorted vegetables (carrots, potatoes, bell peppers, or zucchini), chopped
  • 1 tbsp olive oil

Instructions

  1. Preheat oven:
    Preheat your oven to 400°F (200°C).
  2. Prepare chicken:
    Pat chicken thighs dry with paper towels. Season generously with salt, pepper, and paprika.
  3. Sear chicken:
    In a large oven-safe skillet, melt butter over medium-high heat. Add chicken, skin side down, and sear 4–5 minutes until golden brown. Flip and sear the other side for 3–4 minutes. Remove chicken and set aside.
  4. Sauté garlic & veggies:
    In the same skillet, add garlic and sauté 30 seconds until fragrant. Toss in vegetables and drizzle with olive oil, salt, and pepper. Cook 2–3 minutes.
  5. Roast in oven:
    Return chicken to the skillet, placing it on top of the vegetables. Roast in the oven for 20–25 minutes, until chicken is cooked through (internal temp 165°F / 74°C) and vegetables are tender.
  6. Serve:
    Spoon the garlic butter and roasted vegetables onto a plate. Garnish with fresh thyme or parsley.
