Ingredients

For the Cake:

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup sour cream or plain yogurt
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract

For the Crumb Topping:

  • 1 cup brown sugar
  • ½ cup all-purpose flour
  • ½ tsp cinnamon
  • ¼ tsp salt
  • 4 tbsp unsalted butter, cold and cubed

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. Make the cake batter:
    • In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
    • In another bowl, mix sour cream, melted butter, eggs, and vanilla.
    • Combine wet and dry ingredients until smooth. Pour into prepared pan.
  3. Prepare the crumb topping:
    • In a small bowl, mix brown sugar, flour, cinnamon, and salt.
    • Cut in cold butter with a pastry cutter or fork until mixture resembles coarse crumbs.
    • Sprinkle evenly over the cake batter.
  4. Bake:
    • Bake for 35–40 minutes or until a toothpick inserted in the center comes out clean.
  5. Cool and serve:
    • Let cool slightly before cutting into squares. Serve warm or at room temperature.

Tips

  • For extra flavor, add ½ cup chopped nuts (walnuts or pecans) to the topping.
  • Dust with powdered sugar before serving for a pretty finish.
  • Can be made in muffin tins for individual crumb cakes (reduce baking time to 20–25 minutes).
