🍖 Slow Cooker Pork Chops with Gravy

Ingredients

  • 4 bone-in or boneless pork chops
  • 1 tbsp olive oil (optional, for searing)
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup chicken broth
  • 1 tsp paprika
  • ½ tsp black pepper
  • ½ tsp salt (adjust to taste)
  • 1 tsp dried thyme or Italian seasoning
  • 1 tbsp cornstarch + 2 tbsp water (optional, to thicken gravy)

Instructions

  1. Optional sear: Heat oil in a skillet and brown the pork chops for 2–3 minutes per side. This adds extra flavor but can be skipped.
  2. Layer the slow cooker: Place sliced onions and garlic on the bottom. Add pork chops on top.
  3. Make the sauce: In a bowl, mix cream of mushroom soup, chicken broth, paprika, pepper, salt, and thyme.
  4. Pour over chops: Cover the pork chops completely with the sauce.
  5. Cook:
    • Low: 6–7 hours
    • High: 3–4 hours
  6. Thicken gravy (optional): Mix cornstarch with water and stir into the slow cooker during the last 15 minutes.
  7. Serve: Spoon the gravy over the pork chops.
