Ingredients:

  • 12 oz cheese tortellini (fresh or frozen)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup black olives, sliced
  • 1/2 cup diced red bell pepper
  • 1/4 cup red onion, finely chopped
  • 1/2 cup mozzarella balls or cubed cheese
  • 1/4 cup fresh basil, chopped

Dressing:

  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions:

  1. Cook tortellini according to package instructions, then drain and rinse under cold water to cool.
  2. Mix vegetables and cheese in a large bowl.
