🛒 Ingredients (Serves 4)
- 1–1.5 lb (450–680 g) pork tenderloin
- 2 tbsp olive oil
- 2–3 cloves garlic, minced
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp dried rosemary or thyme (or 1 tbsp fresh)
- Optional: 1–2 tsp Dijon mustard or honey for glaze

Oven-Roasted Method
1️⃣ Preheat oven
- 400°F (200°C).
2️⃣ Prepare pork
- Pat tenderloin dry.
- Rub with olive oil, garlic, salt, pepper, and herbs.
- Optional: brush with mustard or honey glaze.
3️⃣ Sear (optional for extra flavor)
- Heat a skillet over medium-high heat.
- Sear tenderloin 2–3 minutes per side until browned.
4️⃣ Roast
- Place tenderloin in a baking dish.
- Roast 20–25 minutes, until internal temperature reaches 145°F (63°C).
5️⃣ Rest & slice
- Let rest 5–10 minutes before slicing into medallions.
🌿 Tips & Variations
- Marinate pork in garlic, soy sauce, honey, and herbs for extra flavor.
- Cook in a slow cooker with sliced onions, carrots, and broth for a hands-off meal.
