🥔 Crockpot Potato Soup

A creamy, comforting soup that’s easy to make in a slow cooker — perfect for chilly days.


🛒 Ingredients (Serves 4–6)

  • 4–5 medium potatoes, peeled and diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup shredded cheddar cheese (optional)
  • ½ cup sour cream or cream
  • 4 slices bacon, cooked and crumbled (optional)
  • ½ tsp salt (adjust to taste)
  • ¼ tsp black pepper
  • ¼ tsp paprika (optional)
  • 2–3 stalks celery, chopped (optional)
  • 2 tbsp butter or olive oil

🔥 Instructions

1️⃣ Prep ingredients

  • Peel and dice potatoes.
  • Chop onion, garlic, and optional celery.

2️⃣ Assemble in crockpot

  • Add potatoes, onion, garlic, celery, broth, salt, pepper, and paprika.
  • Stir to combine.

3️⃣ Cook

  • LOW: 6–7 hours
  • HIGH: 3–4 hours
  • Potatoes should be tender and easily pierced with a fork.

4️⃣ Blend (optional)

  • For creamier texture, mash some potatoes with a potato masher or use an immersion blender.

5️⃣ Add creaminess

  • Stir in cheddar cheese and sour cream until melted and smooth.

6️⃣ Serve

  • Top with crumbled bacon, extra cheese, and chopped green onions.

  • Make it vegan by using vegetable broth and dairy-free cream/cheese.
  • Add cooked shredded chicken for a hearty meal.
