🍤 Salmon-Stuffed Shrimp

🛒 Ingredients (Serves 4)
- 1 lb (450 g) large shrimp, peeled and deveined (leave tails on)
- ½ lb (225 g) cooked salmon, flaked
- 2 tbsp cream cheese, softened
- 1 tbsp mayonnaise
- 1 tsp Dijon mustard
- 1 tsp lemon juice
- 1 clove garlic, minced
- 1–2 tbsp fresh parsley or dill, chopped
- Salt & black pepper
- 2 tbsp breadcrumbs (optional, for topping)
- 1–2 tbsp melted butter or olive oil

1️⃣ Prep shrimp
- Make a slit along the back of each shrimp to create a pocket for stuffing.
2️⃣ Make stuffing
- In a bowl, combine flaked salmon, cream cheese, mayonnaise, mustard, lemon juice, garlic, parsley, salt, and pepper.
3️⃣ Stuff shrimp
- Fill each shrimp pocket with the salmon mixture.
