🍮 Tapioca Pudding (Creamy & Classic)
Soft, chewy pearls in a sweet vanilla custard — simple comfort dessert.
🛒 Ingredients
- ½ cup small pearl tapioca
- 2½ cups milk (whole milk = creamiest)
- ½ cup sugar
- ¼ tsp salt
- 2 eggs
- 1 tsp vanilla extract
🔥 Instructions
1️⃣ Soak (if required)
Some tapioca needs soaking. If your package says to soak, cover pearls with water for 30–60 minutes, then drain.
2️⃣ Cook Tapioca
In a saucepan, combine tapioca, milk, sugar, and salt.
Cook over medium-low, stirring frequently, until pearls turn translucent (about 15–20 minutes).
3️⃣ Temper Eggs
Whisk eggs in a bowl. Slowly add a little hot tapioca mixture while whisking.
Pour egg mixture back into the pot.
4️⃣ Thicken
Cook 2–3 more minutes until pudding thickens (don’t boil hard).
5️⃣ Finish
Remove from heat and stir in vanilla.
Cool slightly — it thickens more as it cools.
Serve warm or chilled.
