🧀 Cheesy Stuffed Meatloaf Bites
These are mini meatloaves with a gooey cheese center — perfect for dinner, meal prep, or party appetizers.
🥩 Ingredients (Makes ~12 bites)
- 1 lb ground beef (80/20 works best)
- 1 egg
- ½ cup breadcrumbs
- ¼ cup milk
- 2 tbsp ketchup
- 1 tsp Worcestershire sauce
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp salt
- ½ tsp black pepper
- 4 oz cheese (mozzarella or cheddar), cut into ½-inch cubes
Optional topping:
- Extra ketchup or BBQ sauce
- Shredded cheese for melting on top
🔥 Instructions
- Preheat oven to 375°F (190°C). Lightly grease a muffin tin.
- In a bowl, mix ground beef, egg, breadcrumbs, milk, ketchup, Worcestershire, and seasonings.
- Scoop about 2 tbsp of mixture, flatten it, and place a cube of cheese in the center.
- Wrap meat around the cheese and seal completely.
- Place into muffin tin wells.
- Top with a small spoon of ketchup or BBQ sauce.
- Bake 18–22 minutes until cooked through (internal temp 160°F / 71°C).
- Let rest 5 minutes before removing (cheese will be hot!).
