Egg Roll in a Bowl is a quick, low-carb meal that gives you all the flavors of an egg roll—without the wrapper. It’s basically a deconstructed stir-fry with ground meat, cabbage, and Asian-inspired seasonings.


🥢 Easy Egg Roll in a Bowl (15–20 Minutes)

Ingredients

  • 1 lb ground pork (or chicken/turkey)
  • 1 tbsp sesame oil
  • 3 cloves garlic (minced)
  • 1 tbsp fresh ginger (grated)
  • 1 bag coleslaw mix (or ~4 cups shredded cabbage + carrots)
  • 3 tbsp soy sauce (or coconut aminos)
  • 1 tsp rice vinegar (optional)
  • 2–3 green onions (sliced)
  • Optional: red pepper flakes or sriracha

Instructions

  1. Heat sesame oil in a large skillet over medium heat.
  2. Cook ground pork until browned.
  3. Add garlic and ginger; cook 30 seconds.
  4. Stir in coleslaw mix and soy sauce.
  5. Cook 5–7 minutes until cabbage softens but still has texture.
  6. Finish with rice vinegar and green onions.
  7. Top with sriracha, sesame seeds, or extra green onions.

🍳 Make It Your Way

  • Low carb / Keto: Keep as is.
  • Over rice: Serve over jasmine or cauliflower rice.
  • Extra veggies: Add mushrooms, bell peppers, or water chestnuts.
  • More “egg roll” flavor: Stir in a splash of hoisin sauce.
