Here’s a basic, bakery-style Muffin recipe that you can customize any way you like—soft inside with a lightly crisp top. 🧁


Classic Muffins (Makes 12)

Ingredients

  • 2 cups (250 g) all-purpose flour
  • ¾ cup (150 g) sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ cup (120 ml) vegetable oil or melted butter
  • 1 cup (240 ml) milk
  • 2 large eggs
  • 1 tsp vanilla extract

Instructions

  1. Heat oven to 400°F (205°C). Line a muffin tin.
  2. Whisk flour, sugar, baking powder, and salt.
  3. In another bowl, whisk oil, milk, eggs, and vanilla.
  4. Gently fold wet ingredients into dry—do not overmix.
  5. Divide batter evenly into muffin cups.
  6. Bake 18–22 minutes, until golden and a toothpick comes out clean.
  7. Cool 5 minutes, then transfer to a rack.

Easy Add-Ins (Choose One)

  • Blueberry: 1–1½ cups fresh or frozen berries
  • Chocolate chip: 1 cup chips
  • Banana nut: 2 mashed bananas + ½ cup walnuts
  • Lemon: Zest of 2 lemons + 2 tbsp juice
  • Cinnamon streusel: Sprinkle crumble on top before baking

Bakery-Style Tips

  • Fill cups ¾ full for tall tops.
  • Start oven hot (400°F) for a better rise.
  • Sprinkle tops with coarse sugar before baking.
