🥗 Healthy Chicken Salad

Ingredients (Serves 2–3)

  • 2 cups cooked chicken breast, diced or shredded (grilled or roasted)
  • 1/2 cup plain Greek yogurt (instead of mayonnaise)
  • 1 tsp Dijon mustard
  • 1 celery stalk, finely diced
  • 1/4 cup red bell pepper, finely diced
  • 1/4 cup cucumber, diced
  • 1/4 cup red onion, finely diced
  • 1 tsp lemon juice
  • Salt & pepper, to taste
  • Optional: chopped fresh herbs (parsley, dill, or cilantro)

Steps

  1. Prep the Ingredients
    • Dice chicken and vegetables into small, bite-sized pieces.
  2. Make the Dressing
    • In a bowl, mix Greek yogurt, Dijon mustard, lemon juice, salt, and pepper.
  3. Combine
    • Toss chicken and vegetables with the dressing until evenly coated.
  4. Chill & Serve
    • Refrigerate 15–30 minutes for flavors to meld.
    • Serve in a sandwich, wrap, lettuce cups, or on a bed of greens.
