🥘 Sausage and Potatoes

🛒 Ingredients (Serves 4)

  • 1 lb (450g) sausage links (Italian, smoked, or your favorite), sliced into 1-inch pieces
  • 1 lb (450g) baby potatoes or Yukon gold, quartered
  • 1 red bell pepper, sliced (optional)
  • 1 small onion, sliced
  • 2–3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp dried thyme or rosemary (optional)
  • Salt & black pepper to taste
  • Fresh parsley for garnish

👩‍🍳 Instructions

1️⃣ Preheat Oven

  • Preheat oven to 400°F (200°C).
  • Line a baking sheet with parchment paper or lightly grease it.

2️⃣ Prepare Ingredients

  • In a large bowl, toss potatoes with 1–2 tbsp olive oil, garlic powder, paprika, salt, pepper, and herbs.
  • In another bowl, toss sausage slices with 1 tbsp olive oil.

3️⃣ Roast

  • Spread potatoes on the baking sheet in a single layer and roast 20 minutes.
  • Add sausage, onion, and bell pepper to the pan. Toss lightly.
  • Roast another 20–25 minutes, stirring halfway, until potatoes are golden and sausage is cooked through.

4️⃣ Serve

  • Garnish with chopped parsley.
  • Serve hot as a hearty breakfast, brunch, or dinner.

  • Spicy kick: Use spicy sausage or sprinkle crushed red pepper over potatoes.
  • One-pan stovetop version: Cook sausage in a skillet, remove, then sauté potatoes and veggies in the same pan before returning sausage to combine.
  • Cheesy version: Sprinkle shredded cheddar over the potatoes in the last 5 minutes of roasting.
