Here’s a fun, family-friendly Walking Taco Casserole — all the flavor of a fair-style walking taco in an easy baked dish 🌮


🌮 Walking Taco Casserole

Ingredients (Serves 6–8)

  • 1 lb ground beef (or ground turkey)
  • 1 small onion, diced
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 1 (10 oz) can diced tomatoes with green chilies (like Rotel), drained
  • 1 (15 oz) can black beans or pinto beans, drained & rinsed
  • 1 cup frozen corn (optional)
  • 2 cups shredded cheddar or Mexican blend cheese
  • 4 cups crushed corn chips (like Fritos), divided
  • ½ cup sour cream (optional, for creamier version)

Toppings (Optional)

  • Shredded lettuce
  • Diced tomatoes
  • Sliced jalapeños
  • Salsa
  • Guacamole
  • Extra sour cream

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 baking dish.
  2. Cook the meat
    In a skillet over medium heat, cook ground beef and onion until browned. Drain excess grease.
  3. Season & mix
    Stir in taco seasoning, diced tomatoes, beans, and corn. Simmer 3–4 minutes.
    Stir in sour cream if using.
  4. Layer
    Spread half the crushed corn chips in the bottom of the baking dish.
    Spoon meat mixture evenly over chips.
    Sprinkle with 1½ cups cheese.
    Top with remaining chips and remaining cheese.
  5. Bake
    Bake 15–20 minutes until cheese is melted and bubbly.
  6. Serve
    Add fresh toppings just before serving for that true “walking taco” vibe.

Tips

  • For extra crunch, add some chips after baking instead of all before.
  • Swap beef for shredded chicken.
  • Make it spicier with hot taco seasoning or extra jalapeños.
  • Great for game day or potlucks!
