🍅 Magic Tomato Salad

A refreshing, simple, and flavorful salad that makes tomatoes taste extra vibrant — perfect as a side dish or appetizer.

  • 4–6 ripe tomatoes (heirloom or vine-ripened recommended)
  • 1 small red onion, thinly sliced
  • 2 tbsp extra virgin olive oil
  • 1–2 tsp balsamic vinegar or red wine vinegar
  • 1 tsp sugar (optional, to balance acidity)
  • Salt & black pepper, to taste
  • Fresh herbs: basil, parsley, or chives, chopped
  • Optional: feta cheese or mozzarella pearls

🥣 Instructions

1️⃣ Prepare Tomatoes

  • Wash and slice tomatoes into wedges or rounds.
  • Place in a bowl.

2️⃣ Add Onion & Seasonings

  • Add thinly sliced onion to tomatoes.
  • Drizzle with olive oil and vinegar.
  • Sprinkle with salt, pepper, and sugar (if using).

3️⃣ Toss & Marinate

  • Gently toss to coat evenly.
  • Let sit 10–15 minutes at room temperature to allow flavors to meld.

4️⃣ Garnish & Serve

  • Sprinkle with fresh herbs.
  • Optional: add crumbled feta or mozzarella pearls for richness.
  • Serve chilled or at room temperature.

🔥 Tips & Variations

  • Extra Flavor: Add a dash of garlic powder, crushed red pepper, or a squeeze of lemon juice.
  • Mediterranean Twist: Include olives, cucumber, or roasted red peppers.
  • Sweet & Tangy: Use honey instead of sugar for a subtle sweetness.
  • Make-Ahead: Marinate for 30–60 minutes to intensify flavor.
