Perfect combo 😮‍💨🥓🧅 Simple, classic, and it hits. Here’s how to do collard greens with chopped onions and bacon—no extra fuss.


🥬 Collard Greens with Bacon & Onions

Ingredients

  • 2 bunches collard greens, washed, stemmed, chopped
  • 6–8 slices bacon, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic (optional but recommended)
  • 3–4 cups chicken broth or water
  • Black pepper to taste
  • Red pepper flakes (optional)
  • Salt (add at the end)
  • Splash of apple cider or hot pepper vinegar

Directions

  1. Cook the bacon
    In a big pot, cook chopped bacon until crispy.
    Remove some bacon if you want it crunchy for topping—leave the grease.
  2. Sauté onions
    Add chopped onions to the bacon fat. Cook until soft and lightly golden.
    Add garlic and stir for 30 seconds.
  3. Add liquid
    Pour in broth/water and black pepper. Bring to a simmer.
  4. Add collards
    Add greens in batches, stirring them down as they wilt.
  5. Simmer
    Cover and cook on low 45–60 minutes, until tender.
  6. Finish strong
    Taste, add salt if needed, splash of vinegar, and stir bacon back in.

🔥 Little upgrades (optional)

  • Pinch of sugar if greens are bitter
  • Crushed red pepper for heat
  • Serve with cornbread to soak up that pot liquor
