Here’s a quick, cheesy Beef Quesadilla recipe — crispy, flavorful, and perfect for a weeknight meal 🌮🧀🥩


Beef Quesadillas

Serves: 2–4
Time: 20–25 minutes

Ingredients

  • 500 g (1 lb) ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • ½ tsp cumin
  • Salt & pepper, to taste
  • 1 cup shredded cheese (cheddar, mozzarella, or Mexican blend)
  • 4–6 large flour tortillas
  • 1 tbsp oil or butter

Optional extras:

  • Diced bell peppers
  • Corn kernels
  • Jalapeños or chili flakes
  • Fresh coriander (cilantro)
  • Sour cream, salsa, or guacamole for serving

Instructions

  1. Cook beef
    Heat a pan over medium heat. Add beef, onion, and garlic. Cook until beef is browned and onion softened. Drain excess fat.
  2. Season
    Stir in chili powder, paprika, cumin, salt, and pepper. Optional: add peppers or corn. Remove from heat.
  3. Assemble quesadillas
    Place a tortilla on a clean pan or griddle. Sprinkle half with cheese, then beef mixture, then more cheese. Fold the tortilla over.
  4. Cook
    Heat 1 tsp oil or butter over medium heat. Cook quesadilla 2–3 minutes per side until golden and cheese melted. Repeat with remaining tortillas.
  5. Serve
    Cut into wedges and serve with sour cream, salsa, guacamole, or a simple salad.

Tips

  • Use medium heat so tortillas get crisp without burning.
  • Add a little cream cheese or shredded mozzarella for extra gooeyness.
  • For meal prep, cool and wrap quesadillas individually — reheat in oven or skillet.
