Chicken Sopas (Filipino Chicken Macaroni Soup)
Ingredients
- 2 tbsp oil or butter
- 1 small onion, chopped
- 3 cloves garlic, minced
- 500 g chicken (bone-in pieces or shredded cooked chicken)
- 6 cups water or chicken broth
- 1 cup elbow macaroni
- 1 cup evaporated milk
- 1 medium carrot, diced
- ½ cup cabbage, chopped
- Salt and pepper to taste
Optional but classic:
- 1 hotdog or ham, sliced
- 1 stalk celery
- Fish sauce (patis) to taste
Instructions
- Sauté aromatics
Heat oil/butter. Sauté onion until soft, add garlic until fragrant. - Cook the chicken
Add chicken, season with salt/pepper. Cook until lightly browned. - Simmer
Pour in water or broth. Simmer until chicken is tender.
Remove chicken, shred it, then return to pot. - Add macaroni & veggies
Add macaroni and carrots. Simmer until pasta is tender. - Make it creamy
Lower heat. Add evaporated milk and cabbage.
Simmer gently 2–3 minutes (don’t boil hard). - Season & serve
Adjust salt, pepper, or add a little patis for depth.
Tips for extra good sopas
- Use bone-in chicken for richer flavor
- Add milk slowly on low heat so it doesn’t curdle
- Thicker sopas? Let it rest 5–10 minutes before serving
