Fried plantain

Ooo yes πŸ˜‹ fried plantain is elite comfort food. Here’s the simple, crispy-on-the-outside, soft-on-the-inside way.

Fried Plantain (Dodo)

Ingredients

  • Ripe plantains (yellow with black spots = best flavor)
  • Vegetable or palm oil (for frying)
  • Salt (optional)

Instructions

  1. Peel plantains
    Cut off the ends, slit the skin lengthwise, peel.
  2. Slice
    • Diagonal slices = classic & pretty
    • Thin slices = crispier
    • Thick slices = softer inside
  3. Heat oil
    Medium heat. Oil should be hot but not smoking.
  4. Fry
    Add plantains in batches (don’t overcrowd).
    Fry 2–3 minutes per side until golden brown.
  5. Drain & season
    Remove and place on paper towels. Sprinkle a tiny bit of salt if you like.

Pro tips

  • Sweeter plantain β†’ wait till it’s very ripe
  • Crispier β†’ fry twice (once light golden, rest 1 min, fry again)
  • Savory twist β†’ sprinkle chili powder or cayenne
  • Extra flavor β†’ fry in palm oil πŸ”₯

Serve with

  • Eggs 🍳
  • Jollof rice 🍚
  • Beans (plantain + beans = unbeatable)
