🍽 Biscuits and Gravy

Ingredients (4 servings)

For Biscuits (makes ~8)

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 6 tbsp cold butter, cubed
  • ¾ cup buttermilk

For Sausage Gravy

  • 1 lb breakfast sausage (pork or turkey)
  • 3 tbsp all-purpose flour
  • 2–3 cups milk
  • Salt & black pepper, to taste
  • Optional: pinch of crushed red pepper

Instructions

1️⃣ Make Biscuits

  1. Preheat oven to 425°F (220°C).
  2. In a bowl, whisk flour, baking powder, baking soda, and salt.
  3. Cut in cold butter until mixture resembles coarse crumbs.
  4. Stir in buttermilk until dough just comes together.
  5. Turn dough onto floured surface, gently knead 2–3 times.
  6. Roll or pat to ½–inch thickness; cut with a biscuit cutter.
  7. Bake 12–15 min until golden.

2️⃣ Make Sausage Gravy

  1. Cook sausage in a skillet over medium heat, breaking into crumbles. Drain excess fat, leaving 2–3 tbsp.
  2. Sprinkle flour over sausage, stir 1–2 min.
  3. Gradually add milk, stirring constantly to avoid lumps.
  4. Simmer 5–7 min until thickened. Season with salt, pepper, and optional crushed red pepper.

3️⃣ Serve

  • Split biscuits in half and ladle hot sausage gravy over the top.

  • Extra fluffy biscuits: Keep butter cold and handle dough gently.
  • Make ahead: Biscuits can be baked in advance; reheat while gravy is cooking.
  • Variations:
    • Add shredded cheese to gravy for extra richness.
