Cream Cheese Spread with Vegetables & Herbs

Ingredients

  • 250 g (8 oz) cream cheese, softened
  • 2โ€“3 tbsp Greek yogurt or sour cream (for spreadability)
  • ยผ cup finely chopped cucumber (seeds removed)
  • ยผ cup finely chopped red capsicum / bell pepper
  • 2 tbsp finely chopped spring onion or red onion
  • 1 tbsp grated carrot (optional)
  • 1โ€“2 tbsp fresh herbs, finely chopped
    • Dill, parsley, chives, or a mix
  • 1 tsp lemon juice
  • Salt & black pepper, to taste

Instructions

  1. In a bowl, mix cream cheese and yogurt until smooth.
  2. Stir in vegetables, herbs, and lemon juice.
  3. Season with salt and pepper.
  4. Chill 15โ€“30 minutes for best flavour.
